I agree that romance is generally overrated. It is one reason I was not a fan of Wolf and Scarlet's instant love. I haven't read a lot of books with lesbians, but I want to. I need to find the Miseducation of Cameron Post. I do like Kai and Cinder's love because it is gradual and awkward-- not overly passionate.
Well, since it's a fairy-tale retelling it makes sense that all the lead females have their "prince charming".
Except that they are retellings of existing fairytales and none of the original princesses are interested in the same sex, that would be too much of a change from the original, because from what I can tell, they are meant to loosely follow the characters lives/interests while adding extra flare, to change a characters sexual preference would be pointless. There are plenty of same-sex love books out there, and people don't read those and say "I wish he/she were straight". Besides, in these books the romance doesn't even play that much of a part of it anyway. They are paired up then never really do anything with it, besides kiss once or twice. These are definitely not romance based books, they are just a bonus on top of the existing story.

I understand what you mean about the underrepresentation of Lesbians in young adult fiction. But there are quite a few good books out there. :)
