Maus and Maus II -- They are graphic novels, though, but surprisingly well done.
I have a friend who is a Holocaust literature buff, so I can ask her and post again later. This is pretty much the extent of my knowledge (besides Diary of Anne Frank).

If you like fiction, I've heard The Book Thief is very good.
I'd also recommend Night.

Two others that I have read, that were both very good, but absolutely heart-wrenching are Children in the Holocaust and World War II: Their Secret Diaries and Survival in Auschwitz.
I have many more on my to-read list, so while I haven't read these ones myself, I thought they looked interesting:
I Will Plant You a Lilac Tree: A Memoir of a Schindler's List Survivor
The Girl in the Green Sweater: A Life in Holocaust's Shadow
Auschwitz: A Doctor's Eyewitness Account
I Have Lived a Thousand Years: Growing Up in the Holocaust
Eyewitness Auschwitz: Three Years in the Gas Chambers
Rena's Promise: A Story of Sisters in Auschwitz
The Seamstress
The Nazi Officer's Wife: How One Jewish Woman Survived the Holocaust
All But My Life: A Memoir

Personally, Night is much better than Anne Frank. It's quite a good book!

Perhaps you'd like Liverpool Street by Anne Voorhoeve as well, although I don't know if there is an English translation of that one...

Haven't read Night, it sounds great but that is a fiction book whereas Anne Frank's Diary isn't so it's not so easy to say one is better than the other, I wouldn't have thought.
(I'd be betting Anne Frank is better)

Between Shades of Gray

I just finished reading Night by Elie Wiesel for a school project. It was very good, in my opinion better than Anne Frank. But I guess you'd have to read it for yourself
