The Darkest Minds.... I am anticipating that book 2 & 3 will be at least as good as 1. Loved it!!....
Artemis Fowl
The Secrets of the Immortal Nicolas Flamel
The Lord of the Rings(does that count as a series? It's one book published as three so...)
Sorrel's excellent point of Cat Royal
Crown & Court Duel
And that about does it!
Edit: How could I forget?! Harry Potter

Outlander series by Diana Gabaldon. Best ever and still going. Next one should be out soon.
The Dragons in Our Midst + Oracles of Fire + Children of the Bard series by Bryan Davis. They aren't well-known at all, but they would be as popular as The Hunger Games if they were! It's all one big series...:) READ THEM!!!!
I loved the Hunger Games series, as well as the Percy Jackson and The Lost Heroes series. The Lord of the Rings was a great series, though it truly felt like one long novel rather than three separate ones.
Harry Potter hands down! Nothing coming out nowadays comes close to it! JK Rowling created a legacy with those books!
1. Harry Potter
2. A Song of Ice and Fire
3. The Breathing Series

Simon R Green's Nightside series,
Kim Harrison's Hollows series,
Kim Harrison's Hollows series,
The In Death series by J.D. Robb. I can't get enough of Eve Dallas and Rourke.
The Discworld books, although they're more of a collection than a series, as such
Vampire Academy by Richelle Mead
or
Pretty Little Liars by Sara Shepard
I couldn't put either of them down, even when asked to

The Cat Royal Series by Julia Golding or His Dark Materials Trilogy by Phillip Pullman. And the Sally Lockhart series
PJO series! But nevertheless, THG is my third favorite after HP! <3
Divergent (Divergent) by Veronica Roth, definitely.
Follow-ups are City of Bones (The Mortal Instruments) by Cassandra Clare, The Angel Experiment (Maximum Ride) by James Patterson, and Darkest Powers Trilogy by Kelley Armstrong.

I rather enjoyed His Dark Materials and The Foundation Trilogy.
Oh, and here's an obscure one: The Raj Quartet.
