I've been dreading this phase of cookbook making since long before I was making a cookbook. ÌýI hate recipes.ÌýÌýI hate cooking from them, I hate writing them, and I did everything I could to avoid having to write them, including coming up with an entire cooking philosophy that eschews them.

But, I realize you guys need them. ÌýNot only that--you want them. ÌýMy Salt, Fat, Acid, Heat students cook with me for over 20 hours,Ìýand then the first thing they ask for at the end of class is...all of the recipes. ÌýI get it. ÌýI can't throw you guys to the wolves. ÌýSo I've given in and have written a compendium of essential recipes that put the lessons of Salt, Fat, Acid and Heat into practice. ÌýAnd now, I need to test them.

I'm going to cook through everything, and then hand it off to those of you who are willing. ÌýWhether you're a home cook, or a professional, avid or amateur, vegan or omnivore, I've got something for you to test. Ìý
