Les Liaisons Dangereuses - the 19th Century French epistolary novel by Pierre Choderlos is an absolute must read. Don't be put off by the fact that it's a classic. It's ridiculously entertaining even if you're already seen Dangerous Liaisons - the film with John Malkovitch and Glen Close.

I liked Gut gegen Nordwind (Love Virtually) and Alle Sieben Wellen (Every Seventh Wave ) both by Daniel Glattauer. The first one is slightly better, in my opinion.

The Montmaray Journals by Michelle Cooper is a lesser known but very good epistolary style historical fiction trilogy.

The Expedition of Humphrey Clinker is a epistolary style book. It was published in the late 1700's so the writing (grammar, spelling) is interesting. You almost have to sound out some of the words to figure out the meaning. Sartain is certain. Even though it's old, the characters and story are familiar and ring true to human nature that transcends the era.
