Oooh, I love this question! My favorite recipe for chai is my mom's which is made with lots of ginger and a dash of love. :) This is closest to how my mom makes it -
As for lemon tarts, that's harder. I have a lot of opinions about them (not too sweet please!) but I think this recipe from Mary Berry is the closest to what I like. It has a solid curd to crust ratio, is tart and not too sweet, and allows the lemon flavor to really shine.
